Bun Mi Sandwiches has been a favorite, quick lunch spot of mine since I attended the University of Minnesota. It is located just steps from the East Bank METRO Green Line light rail stop on Washington Avenue. Unfortunately, the block where Bun Mi, Big Ten, Village Wok and Expresso Exposé are located is going to be the site of a 26-story apartment building. Before the restaurant closes doors on August 26, I would recommend popping in for a classic bánh mì sandwich with your choice of pork, chicken, beef, mock duck or tofu. They also do customizable salads with many of the same sandwich garnishes, including pickled carrots, cucumbers, green onions, and cilantro, all on a bed of vermicelli noodles. Their sauces are always on point, as far as the garlic mayo and peanut vinaigrette goes. And their fries are generously cut and seasoned just right.
Bun Mi announced its official closing date on their Facebook page and hinted at this not being the end of their legacy. An outpouring of likes and sad-faced emojis followed, as well as many heartfelt comments.
